This versatile blueberry mint lemonade is a satisfying late-summer thirst quencher. The mix is flavorful so it can stand up to loads of ice cubes. It tastes great mixed with seltzer or a few drops of bubbly for a lively adult beverage, and is a big seller at impromptu lemonade stands on hot summer days.
- 1 cup sugar
- 1 cup water
- 1 cup blueberries
- ¼ cup mint leaves
- ¾ cup fresh squeezed lemon juice, about 4 to 5 lemons
- 5 cups water, or more to taste
Pour the sugar and water into a 1 quart saucepan. Bring to a boil, then reduce heat to a simmer, stirring occasionally until the sugar dissolves. Transfer to a blender. Add the blueberries and mint and blend on high speed until smooth, 1 to 2 minutes.
Pour the blueberry syrup through a strainer into a container and refrigerate until cold.
In a large pitcher, combine the cooled syrup, lemon juice, and five cups of water. Blend well and serve in tall glasses loaded with ice cubes. The drink will keep in the refrigerator for up to five days.
