Jaggery is an unrefined type of sugar which is used in many Asian countries such as India, Myanmar, and Sri Lanka. Jaggery is usually made from sugar cane, date palm, or palmyra. In countries where it is prominent, jaggery is considered healthy because of its lack of refinement. Jaggery is available in some specialty stores, as well as online.

JAPANESE RICE

Japanese rice is a short grain rice. It is available in many different forms, but by far the most prominent is koshihikari. Koshihikari is well suited for making sushi because it is sticky. Jasmine rice is is a long-grain rice that originated in Thailand; however, it is now grown in other parts of the world. It is lauded for its unique flavor and faintly floral aroma. JULIENNE

A Julienne or ‘shoestring’ is a culinary knife cut in which a food is cut into long, thin, uniform strips using a sharp knife. Vegetables are the most common food to be julienned.

JUNMAI-SHU SAKE

Junmai-shu sake is a type of Japanese rice wine that is made without the addition of any alcohol or sugar other than those that occur naturally during fermentation. This produces a full-bodied wine with strong acidity.
